This semester we welcomed Octavio, our new chef, into our home. Octavio is known for his food truck located in downtown Fargo called Taco Bros. Albondigas, tacos with chicken, ground beef, asada and al pastor, tostadas, taquitos and tamales are just some of the Mexican cuisine he has prepared for us. Aside from his specialties, we have also enjoyed many meals such as zucchini boats, spaghetti pie, homemade pizza and eggs benedict just to name a few. Sometimes he even throws ingredients together and creates something new but he never fails to make something delicious.
Octavio predominantly shops at Sam’s Club and because of that he won Member of the Year in 2015. He says it’s awesome when he shops for supplies at Sam’s, he doesn’t have to wait in line because they know him so well and open a new register for him. He has also won Best Food Truck for the High Planes Reader Magazine in 2016. According to Fargo’s Chamber of Commerce, Taco Bros in one of the top 10 places to visit when you come to town. He is 5 stars on yelp and has been interviewed for 2 different television shows.
He loves the challenge of making new things. If we tag him in cooking videos or tell him we are craving something he has never made before, we will find him in the kitchen the very next day making our request and putting his own spin on the recipe. Octavio obviously loves to cook and he says that if he could wear his apron all day, he would.
His favorite things about cooking for us is getting to know our taste buds. After that, he loves to find a way to get us to eat something we think we don’t like. When asked if he likes cooking for Kappa Delta, he said, “I really do enjoy cooking for you, and I’m fairly certain its better than driving for Uber.”
We are so lucky to have Octavio cooking for us during his off season. It is certain that we are eating good here at Kappa Delta.
